I have had a lot on my mind lately that has brought me to think about my own life. Recently a customer of mine who I saw once a week passed away from giving birth to her daughter. Thankfully the baby lived and is beautiful and healthy. But this leaves the grandma in charge to raise this itty bitty new born. Every time the Grandma comes in with this baby my heart feels so sad. NOt only cause I know how hard it is to loose someone you love, but also the new trials this mother must face.

This all just really humbles me and makes me so grateful for the people in my life and the knowledge that I know. I hope that I can always remember this situation and realize that my life is not so bad.

Now on to a better note, I must admit I haven't been the best wife to Brian as I had once promised I would be. I hardly EVER make dinner. If I do it is a piece of chicken and vegetables. That is it!! Boring! So if any of you have any favorite and easy recipes that you like to make, help me out and please share:) I think that I could be good at this cooking thing if I just gave it a shot!

  1. That news is so sad. You hardly ever hear of anyone dying during childbirth, so this must have been so devastating.

    I haven't had anyone very close to me die, so I don't know exactly how it feels. But, I've always thought of you and Niki and how strong you two are and what great examples you are to me. Someday when that day comes when someone close to me passes I will surely look to you two for comfort because you'll know exactly how to give that comfort.

  3. I know what you mean about loosing someone with the loss of my mom. It is hard. I acctually just posted something along these lines. . .weird. But I also have a comfort knowing we are given these trials for a reason and there is a plan and we will not feel shorthanded in any way when all is said and done. I am going to give you a couple recipes but blogger only lets you write so much so I will leave seperate comments for each recipe. Thats so awesome that you are trying to be a better wife, I know you will be blessed for doing so! miss ya!

  4. THESE ARE ALL INTENDED TO BE QUICK AND EASY AND CHEAP!
    chicken sandwich- I take shake and bake chicken(extra crunchy) and make it as it says on the box. Then I place it on a bun and top it like I would a hamburger. Kinda like chick fil a but less grease. Add a can of veggies and theres a meal!

  5. Baked ziti- in one pot boil one box of ziti noodles(walmart $1) drain when done. I another pot brown some ground beef OR ground turkey, when meat is brown add one can of spagetti sauce($1) and 1/2 a stick of cream cheese. mix until cheese is dissolved and add the sauce mixture to the noodles, top with parmisan or motzerella cheese, add a salad or veggies!

  6. chicken enchaladas(the creamy ones make me sick)- before you go to work take 2-3 chicken breasts and put them in a crockpot with water on low heat( or boil chicken if out of time to crockpot) when you get home from work shred the chicken. take small flour tortillas and in the middle add a strip of chicken, a strip of stredded cheese and a strip of enchalada sauce (any brand suace BUT BUY A large can). roll up the tortiallas and place in a dish and pour the rest of the sauce over them and top with a layer of cheese. bake foe 30 minutes uncovered at 350 degrees. ENJOY!

  8. Stuffed Peppers. I think I made these quite a bit when we were roommates, right? I'm sure there is a better recipe out there, but this is the easiest one I've come up with.

    Green bell peppers
    Ground Beef
    Spanish Rice
    Shredded Cheese

    Cut off the tops of the bell peppers, set aside. Empty inside.
    Prepare Spanish rice according to box. I like to get the kind that calls for diced tomatoes and instead use salsa.
    Prepare ground beef, drain.
    Mix rice, beef, and cheese and place inside bell pepper. Add cheese to the top and replace the tops of the peppers. Place on cookie sheet in oven for about 30-40 minutes at 350.

  9. Chicken and Broccoli. I got this recipe from Kelly Baker Huish and probably make it every other week! It's easy and really good.

    2-3 chicken breast, cooked and cubed
    1-2 stocks broccoli (steamed or microwaved)

    1 (8 oz) can cream of mushroom
    1/2 C miracle whip/ mayonaise... mayo is better!
    1/2 C milk
    1 C cheddar cheese, shredded

    Mix everything together and put in casserole dish and cover with tinfoil. Bake at 350 degrees for 30 minutes.

  10. Seafood: I'm not sure if you guys like seafood, but I love it. Here are some really easy ways to prepare some seafood.

    Salmon:

    All we do for salmon is marinate it in soy sauce with a little bit of brown sugar and then broil in the oven.

    King Crab Legs:

    Boil or bake then serve with melted butter with Old Bay seasoning. (the crab legs from the meat section in the grocery store are usually already cooked, so you just need to heat them either by boiling or baking).

    Shrimp Stir Fry:

    I like to buy fresh, raw shrimp. It's kind of a pain to de-shell and de-vein them, but the flavor adds so much.

    Prepare the shrimp over stovetop (I just use butter in a skillet) until pink on both sides. Don't overcook. Set aside.

    Prepare desired vegetables with olive oil. Add shrimp and bottle of stir fry sauce (I love the Kikkoman brand). Serve over rice or noodles.

  11. Crock Pot Roast:

    Roast
    1 can Cream of Mushroom
    1 package Lipton Onion Soup
    Carrots
    Potatoes
    1 cup water

    Place in Crockpot on high for 4 hours, or low for 8. The gravy is the best part about this, so I love serving the roast, vegetables, and gravy with mashed potatoes.

  12. Italian Chicken:

    This is so easy and really good.

    Boneless, skinless chicken breast
    Italian salad dressing
    Sliced onion

    Place in crock pot on low for several hours (the longer, the more tender and shreddable). Serve over rice.
